This coffee has a smooth, creamy body with complex notes of tropical fruit, kiwi and sweet honey.
A stainless steel pressure tank was used for this process. The tank was filled with coffee cherries and flushed with CO2 to create an oxygen-free environment. The cherries are fermented for 5 days. From this first process, the coffee juice is extracted. The fermented cherries are then de-pulped and returned to fermentation with the extracted juice mixed with selected ingredients. This second process takes another 3 days. Finally, the coffee cherries are ready to be dried for another 5 days.
