Made from Caturra cherries, Golden Crush (Gold Digger) coffee begins with a 12-hour pre-fermentation in the cherry to encourage the development of fruity and floral notes. After being de-pulped, the beans undergo aerobic fermentation in concrete tanks for 50 hours, allowing for a deepening of flavor.
After fermentation, the beans are thoroughly washed and dried on raised beds for 15 days, where they are carefully monitored to ensure even drying and optimal moisture retention. After drying, the coffee is stabilized for 15 days in GainPro bags, allowing the beans to rest and the flavors to harmonize.
The result of this careful process is a cup with bright and balanced notes of citric acid, orange, almond, brown pepper, brown sugar, caramel, green tea, mandarin and white chocolate, reflecting the care in the processing and attention to detail. It is mechanically dried in static silos. After a 30-day stabilization period, the flavors harmonize, resulting in a complex, well-balanced cup.
