Molotov Cake

First, a pre-fermentation of whole cherries takes place for 48 hours in sealed bags. Then the cherries are destemmed and the kernels, still with the mucilage, are inoculated with dried bananas. They ferment in this mixture for approximately 5 days. After fermentation, the kernels are pre-dried in an open yard and then mechanically dried in static silo dryers. Subsequently, a stabilization period of approximately 30 days takes place to harmonize the flavors.
